I got busy with my InstantPot today. I steamed a spaghetti squash, tried doing the 'hard boiled eggs', and cobbled together a Chicken Cacciatore Casserole.
I had to quarter the spaghetti squash to get it to fit in my Pot. It came out a bit more done than I would have liked, but it's decent. I'll know next time to cook it for a bit less time.
As for the eggs, I needed to cook them for a minute or two more. I was making egg salad and the yolks were mostly done, so it worked out, but I would have preferred a bit more doneness. But, I'm calling the venture a success and I'll know better next time!
And now for the casserole: I cubed chicken breasts and seasoned them then browned them in the Pot. Poured a jar of Cacciatore simmer sauce over them and closed it up to cook. After the chicken was done I ladled the pieces out and reduced the liquid down until it had thickened. I poured that over the chicken and set it aside. I set the Pot to 'saute' and threw in some diced Butternut squash with some seasonings and oil and cooked it for a few minutes then added that to the chicken. Then I added more oil to the Pot along with yet more seasonings and sauteed some baby bella mushrooms. I added a splash of white wine to de-glaze the Pot and let the 'shrooms go for another couple of minutes. I mixed everything together and added a container of Lifeway Farmer's Cheese (Probiotic). It's kinda like a tangy ricotta. I poured the mixture into a casserole dish and topped it with a Quatro Fromaggio blend. Now it's chillin' in the fridge until it's time to put it in the oven.
The house smells pretty good.
I also finished up laundry.
The only thing left on my to do list for the day is to change the girls' water filter and give the motor a good scrubbing.

I've been eying the NARS Multiple in Maui for, oh, several years now. Ulta just recently started carrying the brand and had a 4-piece gift with purchase last week, so I caved and finally ordered it.
I'm apparently allergic, or at least very sensitive, to something in it. :(
See, the reason I was so intrigued by the Multiple is because it can be used on lips, eyes, and cheeks. Easy to carry and easy to use. I tried it out about half an hour ago and within two minutes my eyes were watering something fierce. It also felt kinda...slimy? on my lips. It works fine on the cheeks, but it's not worth keeping it if I can't use it for the other bits.
We finally got to see Wonder Woman yesterday.
Before the movie we tried out a new (to us) restaurant, Bad Daddy's Burger Bar. Nom. So much nom. If you have one in your area I highly recommend checking it out. They have a Gluten Friendly menu, too.
I got the Frenchie (Turkey burger with Brie, Applewood smoked bacon, grilled apples, with a garlic mayo), no bun, with a side of fresh fruit (honeydew, cantaloupe, pineapple, blueberries, slices strawberries, sliced grapes, & diced green apple). It was delicious. The fruit was one of the best fruit salads I've ever had; all that was missing was a bit of whipped cream. :)
Thomas got the Pastrami Reuben Burger, no bun, with a side of tater tots. They make most of their sauces in house, including their 1000 Island and what they call Bad Daddy Sauce (it's some kind of BBQ aoli and it's a bit addictive).
When we told our server it was our first time and that we really enjoyed the food, he gave us 25% off our bill as a first-timer's discount. Groovy. We'll definitely go back. There's a bunch of stuff on the menu I'd like to try.
As for the movie, I enjoyed it. Not as much as I like my Marvel movies, but on its own it was a good film. Gal Gadot crushed it.
After the credits rolled and we were walking down the stairs, Thomas said, "I'm very disappointed. They set up the perfect situation with the ( spoiler )
I cackled all the way down the stairs and finally managed to tell him, "That's why we have fanfic, honey."
I made the cleaning staff smile because I was laughing so hard.
'Course, now I'm gonna have to go looking for that fic to appease him or possibly write it myself. I really hope there's a quality fic already out there, because I don't know that I want to see this again in theater and I'd have to to get the voices and that scene fixed in my head again.
I still don't really want to watch BM vs SM: Dawn of Justice, but I'm a bit more willing now just to see Diana.

I made a delicious dinner this evening. Kofta Meatloaf with Broccoli Fried "Rice".
I adapted the meatloaf from this recipe by David Lebovitz (who adapted his version from a recipe by Elisabeth Prueitt). I quadrupled the source recipe to make two meatloaves and used a mixture of lamb and ground beef, and I added sauted mushrooms. The only ingredient I was missing was the fresh mint. I honestly didn't miss it. I also made the yogurt-tahini sauce.

Needless to say, we wanted leftovers. Everything had a ton of flavor. I'm quite pleased. I will be making this again.
We went up to Estes Park and Fort Collins yesterday. The weather was gorgeous and it was a lovely drive.
On our way in we stopped at the Colorado Cherry Company to restock our honey supply. They had the Lemon, but were out of the Peach. Still, nom. We also got some tasty mustard.
As we entered Estes on Hwy 36 we saw a lone female Elk wading in the small lake just around the corner from where a bunch of puppers were enjoying the water at the dog park.
It was awesome.
Thomas wasn't up to much walking, but we did a bit. I saw some gorgeous flowers at the start of our stroll and had to take a pic:

We walked up to A La Carte, the little boutique kitchen store and I found the Peach Honey I was after. I also found a silicone steamer basket I can use in my InstantPot to make hard "boiled" eggs. I will...let you know how that experiment goes. I've seen several success stories on different food blogs, so I've got my fingers crossed I don't blow something up on accident.
As has become a bit of tradition, I took a selfie of Thomas and me on the river. Granted, you can't actually see the water, but trust me, we were on the river. It was loud, too. The water level was high. It was a great thing to see. Anywho, here we are:

We took Hwy 34 out of town and enjoyed the drive through the canyon. No bears this time, but it was still a pretty drive. We headed north into Fort Collins and stopped at Serious Texas BBQ to pick up some smoked turkey to bring home. So nom. Thomas was over the moon when we discovered they now have their stuffed baked potatoes on the menu permanently (they'd only been available on Saturdays after 5pm before). We brought home two of those as well. :)
We went to the public garden on the CSU campus and I got pictures of a really pretty Begonia/Tuberhybridia flower.

I got my hair cut and colored today. No more bedraggled mermaid for me. The process got a bit more involved than I anticipated. It wound up being a color correction, because the blue did not want to come out of my hair. We had to bleach it, then tone it, and then finally color it. We wound up not using the color I took in, because C was pretty sure it wouldn't cover well. So we'll save it for next time. My hair is a bit darker than I was going for and not quite as red, but it's still pretty. It's also short. Like, above my shoulders, short. I feel 10lbs lighter.
I've got pics, but please forgive the redness in my face. Methinks I was in the middle of a hot flash when I snapped it.

In other news, I got the approval for the breast reduction surgery. Woo hoo! When I told my PCM this afternoon, she high-fived me. :p Now I just need to figure out the time frame to schedule it. I also got my referral for a second opinion for Endocrinology. Fingers crossed this next doc is more willing to work with me.
